Much of modern travel has been smoothed into familiarity. The local made general, the unfamiliar made comfortable. One destination begins to look very much like the next.
Yet there are still places where traditions endure, with flavours found nowhere else and centuries-old crafts practised by hand. To find them is rare. To experience them from within is rarer still.
This is what Notos was created to offer.
We bring small groups of travellers to extraordinary places and invite immersion in the food, landscapes, traditions, and cultures that make each one unique. Every retreat is guided by a host with deep roots in the region who offers an intimate understanding of place and people.
With us, you will not watch a culture from the edge. You will cook its food, learn the stories behind its traditions, and spend time with the people who keep them alive.
Come curious. Dive in.
FEATURED RETREAT
HOSTED BY HELENA MOURSELLAS & ALLEGRA D'AGOSTINI
Rising from the eastern reaches of the sun-drenched Aegean lies the island of Chios.
Closer to the shores of Asia Minor than to Athens, Chios was forged by centuries of trade, conquest, and resilience. While ferries and crowds funnel toward Greece's more familiar islands, Chios has remained just out of reach. On this island, medieval villages are covered in intricate stone mosaics, turquoise water laps at the shore of sandy beaches, and the island's famed mastic infuses everything from its cuisine to its centuries-old traditions.
This September, we invite you to discover Chios in the company of the local growers, cooks and yiayiades, and of chef Helena Moursellas, who will lead a series of hands-on culinary workshops celebrating the best of Greek cooking.
